Wagyu chuck roll (肩ロース / Katarōsu) is cut from the shoulder, running from the neck to the fifth rib. It is the highest-volume cut in the Japanese wagyu export market by weight, primarily because it is the standard cut for shabu-shabu (Japanese hot pot) and sukiyaki. Even at A4 grade, the marbling in wagyu chuck roll produces a far superior eating experience to commodity beef in thin-sliced applications.
