What Is Wagyu Striploin?
Wagyu striploin (サーロイン / Saroinu) is cut from the short loin, the muscle running along the upper back of the animal. It is one of the two signature export cuts — alongside ribeye — that define the global wagyu steakhouse category. At A4 and A5 grades, the intramuscular fat (BMS 5–12) creates the characteristic silky texture and umami depth that separates Japanese wagyu from all other beef.
For importers, striploin is the highest-volume premium cut in the Japanese wagyu export market. It ships as a boneless subprimal, vacuum-sealed, typically weighing 3–5 kg per piece. Minimum order quantities and pricing tiers are more flexible than tenderloin, making it the standard entry point for new wholesale buyers.
Buyer note: Striploin is one of the cuts most frequently misrepresented in international trade. Always request the original JMGA grading certificate with the carcass number — it is traceable to the individual animal and verifiable.
