What Is Wagyu Inside Skirt?

Wagyu inside skirt (ウチハラミ / Uchiharami) is cut from the diaphragm muscle, on the inner side of the rib cage. It is a thin, intensely flavoured cut with a high fat content and pronounced beefy character — quite different in texture from loin cuts, but prized in yakiniku culture for its rich, satisfying flavour profile. Quick-sear applications over high heat are the standard preparation.
