What Is Wagyu Ribeye?

Wagyu ribeye (リブロース / Riberosu) is cut from the rib section, between the chuck and the short loin. It is widely regarded as the most intensely marbled of all major export cuts — the BMS score for ribeye is typically 1–2 points higher than striploin from the same animal. For importers targeting steakhouse and premium hotel accounts, ribeye is the flagship product.

The ribeye cap (リブキャップ) — the outer curved muscle of the ribeye — is increasingly traded as a separate cut due to its extreme marbling and growing restaurant demand. Buyers sourcing full ribeye subprimals should clarify whether the cap is included.
